- Cod – Rusty’s Universal Seasoning
-Fruit Salsa al Fresco -Vegetable Spray
Cut cod into 5-8oz portions. Season with Rusty’s Universal Seasoning. Spray with vegetable spray. Grill Top with Fruit Salsa al Fresco.
Fruit Salsa al Fresco
Place in bowl –1 c. red grapes quartered, 1c. Red onion fine diced, 2 green onions split & sliced thin, 1c. Mandarin oranges drained, 1c. pineapple tidbits drained, 1 bunch of cilantro-leaves only, chopped, 2 cloves peeled, fresh garlic crushed and chopped fine, ¼ t. Rusty’s Universal Seasoning, ¼ t. Old Bay Seasoning, ½ t. dark red chili powder, ¼ t. paprika, 2T. Rice wine vinegar, juice of one small lime, 2T. Soy sauce, 1T. Olive oil. Gently toss together.
